Chilly nights call for foods that warm the soul. Lentils are protein-rich and make great soups and delicious stews. Here is a fabulous recipe to add to your soup lineup.
Ingredients you'll need:
- 1 Teaspoon dried oregano
- 1 teaspoon dried basil
- 2 cups dry lentils
- 6-8 cups water
- 1/2 cup spinach, rinsed and thinly sliced
- salt and or ground black pepper to taste
- Heat oil over medium heat in a large pot. Add onions, carrots, and celery; cook and stir until onion is tender. Stir in garlic, bay leaf, oregano, and basil; cook for 2 minutes.
- Stir in lentils. Then add water and tomatoes and bring to a boil. Reduce heat, and simmer for at least 1 hour.
